Oysters Rockefeller

Rich shellfish appetizer

Oysters Rockefeller is a dish of oysters on the half shell topped with a rich green sauce of butter, herbs, and breadcrumbs, then baked or broiled.

Created in New Orleans in the late 1890s, it was named for John D.

Rockefeller—reputedly because the sauce was as rich as the oil magnate.

The exact original recipe remains a secret, though spinach, parsley, and anise-flavored liqueur are common ingredients.
