Colby cheese

Cheddar's milder cousin

Colby cheese is a mild, semi-hard American cheese similar to cheddar but softer and moister.

Named after Colby, Wisconsin, where it was developed in the late 1800s.

The cheese has a pale yellow to orange color and a slightly sweet, milky flavor.

Colby-Jack combines it with Monterey Jack in a marbled pattern.

She sliced some Colby for the sandwiches.
