white teas
Pale, subtle infusions
White teas are the least processed category of tea, made from young leaves and buds that are simply withered and dried.
The name comes from the fine white hairs on unopened tea buds.
White teas tend to be delicate and subtle in flavor, with lower caffeine than black or green teas: She preferred white teas for their mild, slightly sweet taste.
