oolong teas
Between green, black
Oolong teas are partially oxidized teas falling between green and black tea in processing and flavor.
The leaves are withered, bruised, and allowed to oxidize briefly before being heated to stop the process.
This yields a range of tastes—some light and floral, others dark and roasted—depending on oxidation level: She preferred a lightly oxidized oolong with notes of orchid.
