Lacking slick coating
Ungreased describes a surface, especially a cooking pan or baking sheet, that has not had grease, oil, or butter applied to it.
Recipes specify ungreased pans when the batter itself contains enough fat, or when sticking is actually desirable—as with angel food cake, which needs to cling to the pan while cooling: Pour batter into an ungreased tube pan.
