undereaten
Not eaten enough
Undereaten describes food that hasn't been consumed as much as expected or desired: The undereaten casserole sat in the fridge for days.
It can also describe a person who hasn't eaten enough: She looked pale and undereaten after the illness.
The word is uncommon, with *uneaten* preferred for unconsumed food.
