tigernuts

Small edible tubers

Tigernuts are small, wrinkled tubers of a sedge plant, not actually nuts despite the name.

They have a sweet, nutty flavor and chewy texture.

Tigernuts are eaten as snacks, ground into flour, or pressed for oil.

In Spain, they're the traditional base for horchata de chufa, a sweet milky drink: Horchata is made from tigernuts soaked and blended with water.
