thick crust

Doughy pizza edge

Thick crust refers to pizza with a substantial, bready base—the opposite of thin crust or New York–style pizza.

The dough is typically risen longer and spread thicker, resulting in a chewier, more filling foundation: I prefer thick crust with lots of toppings.

Pan pizza and Detroit-style are thick-crust varieties.

The term also describes bread or pie with a notably dense outer layer.
