spritz cookie

Extruded butter biscuit

A spritz cookie is a small, crisp butter cookie made by pressing soft dough through a cookie press or pastry bag to create decorative shapes—ribbons, rosettes, wreaths, or stars.

The name comes from German *spritzen*, to squirt.

Traditional at Christmas, they're often tinted with food coloring or decorated with sprinkles: We made three batches of spritz cookies for the holiday party.
