red meat allergy

Alpha-gal immune reaction

Red meat allergy is an immune reaction to proteins found in mammalian meat—beef, pork, lamb, venison.

The most common form, alpha-gal syndrome, develops after tick bites sensitize people to a sugar molecule in red meat.

Symptoms appear hours after eating, unlike most food allergies: She developed a red meat allergy after camping in tick country.
