prebaking
Bake before filling
Prebaking is baking a crust or shell before adding its filling.
Pie crusts are often prebaked to prevent sogginess when the filling is wet, or when the filling requires no cooking: Prebake the crust for ten minutes before adding the custard.
Also called blind baking.
