pizza stones

Oven-floor mimics

Pizza stones are flat, heat-retaining slabs placed in home ovens to simulate the intense, even heat of a commercial pizza oven.

Made from ceramic, cordierite, or cast iron, they absorb moisture from dough while transferring heat directly to the crust: Preheat the pizza stone for at least an hour before baking.

Also called baking stones when used for bread.
