Spiny-finned tiny fish
Mapo appears almost exclusively in mapo tofu, a Sichuan dish of soft tofu in a spicy, oily sauce with fermented black beans and ground pork.
The name comes from Mandarin Chinese, where it refers to a pockmarked old woman—supposedly the creator of the dish.
We ordered mapo tofu extra spicy.
