maple syrup production
Tapping tree sweetness
The process of collecting sap from sugar maple trees and boiling it down to create maple syrup.
Sap flows in late winter when nights freeze and days thaw, and producers tap trees with spouts that drain into buckets or tubing systems.
The sap is then evaporated in a sugarhouse until it reaches the proper density—roughly forty gallons of sap yield one gallon of syrup.
