lemon zest
Grated yellow peel
Lemon zest is the outermost layer of lemon peel, grated or shaved off for its concentrated citrus oils and bright flavor.
It adds intensity to baked goods, sauces, and cocktails without the acidity of lemon juice: Add a teaspoon of lemon zest to the batter.
The zest excludes the bitter white pith beneath.
