golden beet
Amber-hued tuber
A golden beet is a variety of beet with yellow or orange flesh instead of the familiar deep red.
The flavor is milder and less earthy than red beets, and the flesh doesn't bleed its color onto other foods: I roasted golden beets so they wouldn't stain the goat cheese.
Sometimes called yellow beet.
