purple carrot
Colorful underground vegetable
A purple carrot is a carrot variety with deep violet or purple skin, sometimes extending through the flesh.
Purple was actually the original color of cultivated carrots before orange varieties became dominant in the 17th century.
The color comes from anthocyanins, the same pigments found in blueberries and red cabbage.
Purple carrots may turn orange or lose color when cooked.
