Chilled Vietnamese bundles
Cold rolls are Vietnamese rice paper rolls filled with fresh vegetables, herbs, rice noodles, and often shrimp or pork, served uncooked.
Unlike spring rolls, they aren't fried—the translucent rice paper wrapper is softened in water and rolled around the filling.
Usually served with peanut or hoisin dipping sauce: We ordered cold rolls as an appetizer.
