blackening spice

Charred-crust spice blend

Blackening spice is a Cajun seasoning blend used to coat fish, chicken, or other proteins before cooking in a very hot cast-iron skillet.

The high heat chars the spice mixture—typically paprika, cayenne, garlic, thyme, and oregano—creating a dark, flavorful crust: blackened catfish, blackened chicken.

The technique was popularized by chef Paul Prudhomme in the 1980s.
