Raised the pH
Alkalized means treated with an alkali to reduce acidity or raise pH.
The term appears most often with cocoa: alkalized cocoa (also called Dutch-process cocoa) has been processed with an alkaline solution to mellow its flavor and darken its color.
The recipe calls for alkalized cocoa powder.
More broadly, anything alkalized has had its chemical balance shifted toward the basic end of the pH scale.
