Dutch baby
Puffy skillet breakfast
A Dutch baby is a large, puffy baked pancake made by pouring batter into a hot buttered pan and finishing in the oven.
The edges rise dramatically while the center remains custardy.
Despite the name, it's American in origin—German immigrants brought the dish, and "Dutch" likely corrupted "Deutsch." Typically served with lemon juice and powdered sugar: We made a Dutch baby for Sunday brunch.
