2% milk is cow's milk with a fat content reduced to two percent by weight.
The percentage refers to milkfat—whole milk contains about 3.25%, while skim has virtually none. 2% sits in the middle as a compromise between richness and reduced fat: We switched to 2% milk when the doctor said to cut back on saturated fat.
