Ummm is a drawn-out hesitation sound, expressing uncertainty, thoughtfulness, or stalling for time while formulating a response: Ummm, I'm not sure about that.
The extra letters suggest a longer pause than "um." It can also signal skepticism or doubt: Ummm, that doesn't sound right.
