tofu puffs
Airy bean curd
Tofu puffs are cubes of tofu that have been deep-fried until they puff up and develop a golden, spongy exterior while remaining soft inside.
The airy texture makes them excellent for absorbing sauces and broths in stir-fries, soups, and hot pots: Add the tofu puffs near the end so they soak up the braising liquid.
Also called fried tofu or bean curd puffs.
