Salad prep is the work of preparing salad ingredients in a restaurant kitchen—washing lettuce, chopping vegetables, slicing tomatoes.
It's entry-level kitchen work, often assigned to new hires: She started in salad prep before moving to the grill station.
The term can describe either the task or the person doing it.
