Raw cashews are cashew nuts sold unroasted, though the term is somewhat misleading—all commercially available cashews have been heat-treated to remove toxic oils from their shells.
What's marketed as "raw" simply hasn't been dry-roasted or oil-roasted for flavor: I use raw cashews to make dairy-free cream sauces.
They're softer and milder than roasted cashews.
