Rainchecks is the plural of raincheck—originally a ticket stub allowing admission to a future event when the current one is rained out.
The meaning extends to any promise to honor an offer later: The store was out of the sale item, so they gave me a raincheck.
To take a raincheck is to decline an invitation with the understanding you'll accept another time: I can't make dinner tonight, but can I take a raincheck?
