pressure canners
High-heat preserving pots
Pressure canners are large, heavy-duty pots with locking lids designed to process foods at temperatures above boiling point.
Unlike water bath canners, they reach the high heat necessary to safely preserve low-acid foods like vegetables, meats, and beans.
The sealed chamber builds steam pressure, typically monitored by a gauge or weighted regulator: You need a pressure canner for green beans—water bath won't cut it.
