peat smoke
Scotch distillery aroma
Peat smoke is the distinctive aroma produced when peat—partially decomposed organic matter from bogs—is burned to dry malted barley in whisky production.
The smoke infuses the grain, giving Scotch whiskies (especially from Islay) their characteristic earthy, medicinal flavor: The peat smoke comes through on the finish.
The term also describes the smell itself, whether from distilleries or household fires in regions where peat is burned as fuel.
