overstirring

Too much agitation

Overstirring is mixing something too much or too long.

In cooking and baking, overstirring develops excess gluten in batters, making muffins tough or pancakes rubbery: The key to tender biscuits is not overstirring the dough.

The concept extends to any situation where continued agitation causes harm: Overstirring the paint introduced air bubbles.
