overfrying
Too much frying
Overfrying is cooking something too long in hot oil or fat, resulting in food that's burnt, dried out, or unpleasantly tough.
The term applies to any fried food left in the pan or fryer past its ideal moment: The chicken was overfrying while she answered the phone.
Overfried is the more common form.
