littlenecks

Young hard clams

Littlenecks are small hard-shell clams, the youngest and smallest size of quahogs harvested commercially.

Prized for their tender meat and mild flavor, they're typically served raw on the half shell or steamed: a dozen littlenecks with drawn butter.

The name comes from Little Neck Bay on Long Island, where they were originally harvested.
