Montreal bagels
Sweeter, smaller dough
Montreal bagels are a style of bagel distinctive to Montreal, smaller and denser than New York bagels, with a larger hole.
They're boiled in honey-sweetened water before being baked in a wood-fired oven, giving them a slightly sweet flavor and chewier texture.
The two classic varieties are sesame and poppy seed: We stopped at Fairmount for a dozen sesame Montreal bagels.
