lambics
Wild-fermented beers
Lambics are Belgian wheat beers fermented spontaneously by wild yeast and bacteria rather than cultivated strains.
The process produces a distinctively sour, funky flavor unlike conventional beers.
Brewers often blend young and old lambics or add fruit—cherry (kriek) or raspberry (framboise) being traditional.
We ordered a flight of lambics to share.
