dried tofu
Firm soybean block
Dried tofu is tofu that has been pressed to remove moisture, then dried further to create a firm, chewy texture.
Unlike silken or soft tofu, it holds its shape when sliced or stir-fried: Add the dried tofu strips to the vegetables.
Common in East Asian cuisine, it absorbs sauces and seasonings readily.
Also called tofu gan or bean curd sticks depending on the form.
