artichoke bottoms
Edible flower bases
Artichoke bottoms are the fleshy, cup-shaped bases of artichokes with the leaves, choke, and stem removed—the most tender and prized part of the vegetable.
They appear in fine dining preparations, often stuffed or used as elegant vessels for other ingredients: artichoke bottoms filled with crabmeat.
Also called artichoke hearts, though hearts sometimes include more of the inner leaves.
