Chinese water chestnuts

Crunchy marsh tubers

Chinese water chestnuts are the crunchy, mildly sweet corms of an aquatic plant native to Asia, commonly used in stir-fries and other East Asian cooking.

Unlike tree chestnuts, they grow underwater in muddy ponds.

The white flesh stays crisp even when cooked: The stir-fry had bamboo shoots and water chestnuts.

Often sold canned in Western supermarkets.
