undermix
Blend too little
To undermix is to mix ingredients insufficiently, leaving components unevenly distributed or poorly incorporated.
The term appears mostly in baking, where undermixing can leave pockets of flour or a streaky batter: The lumpy texture suggests you undermixed the dough.
Sometimes undermixing is deliberate—overmixing develops gluten and toughens baked goods.
