overmix
Beat too much
To overmix is to mix something beyond the optimal point, especially in cooking and baking.
Overmixing develops too much gluten in doughs and batters, producing tough, dense results: Don't overmix the muffin batter or they'll be rubbery.
The term applies outside cooking when blending becomes excessive: The DJ overmixed the track until it lost its edge.
