Tipping out is the practice in restaurants and bars where servers share a portion of their tips with support staff—bussers, bartenders, food runners, hosts.
At the end of a shift, servers calculate a percentage of their earnings and distribute it: I made two hundred tonight but after tipping out I kept about one-sixty.
The system recognizes that service depends on teamwork, though disputes about fair percentages are common.
