taste receptor
Tongue's sensory cell
A taste receptor is a specialized cell or protein structure on the tongue and other oral surfaces that detects chemical compounds in food and drink, sending signals to the brain that register as taste.
Humans have receptors for five basic tastes: sweet, salty, sour, bitter, and umami.
Certain compounds can temporarily block taste receptors.
