tamis
Fine mesh sieve
A tamis is a fine-mesh sieve used in cooking, typically a drum-shaped frame with cloth or fine wire stretched across it.
Chefs use it to strain sauces, purée vegetables, or sift dry ingredients to achieve smooth, lump-free textures: Pass the sauce through a tamis before serving.
Also called a drum sieve or tammy.
