spot check
Unannounced quality inspection
A spot check is a quick, unannounced inspection of a random sample—checking some items or instances rather than all of them: Health inspectors conduct spot checks on restaurants.
The randomness is the point: you can't prepare for what you don't see coming.
As a verb, to spot-check is to perform such an inspection: We spot-checked the inventory for discrepancies.
