silver skin
Tough connective tissue
Silver skin is the thin, translucent connective tissue membrane found on cuts of meat, particularly pork tenderloin and beef.
Unlike fat, it doesn't break down during cooking and becomes unpleasantly chewy, so recipes typically instruct you to remove it: Use a sharp knife to trim off the silver skin before cooking.
