oil infusion

Herb-steeped fat

An oil infusion is oil that has absorbed flavor, color, or medicinal compounds from herbs, spices, or other plant materials steeped in it: garlic-infused olive oil, rosemary oil infusion.

The process differs from essential oil extraction—infusions are gentler, retaining the base oil's character while taking on properties of the infused ingredient.

Common in cooking and herbal medicine.
