kettle chip
Batch-fried potato crisp
A kettle chip is a potato chip cooked in batches in a kettle or vat rather than on a continuous conveyor, resulting in a thicker, crunchier chip with irregular edges and more varied browning.
The batch process allows chips to cook longer at lower temperatures: I prefer kettle chips to regular ones.
