garlic scapes
Allium flower stalks
Garlic scapes are the curly green stalks that shoot up from hardneck garlic plants, typically harvested in late spring before they flower.
They have a mild, fresh garlic flavor and are used in pestos, stir-fries, and grilled as a vegetable: I made pesto with the garlic scapes from the farmers market.
