Dry martinis is the plural of dry martini, a cocktail of gin (or vodka) and dry vermouth, typically garnished with an olive or lemon twist.
The "dry" refers to using less vermouth—the drier the martini, the less vermouth.
An extremely dry martini may involve only a rinse of vermouth or none at all: I'll have two dry martinis, very cold.
