Alfalfa sprouts are the young shoots of the alfalfa plant, harvested days after germination when they're thin, pale, and thread-like with tiny leaves.
They have a mild, slightly nutty flavor and appear most often in salads and sandwiches: a veggie wrap with avocado and alfalfa sprouts.
The sprouts became emblematic of health-food culture in the 1970s and 80s.
