Cornish hens
Single-serving poultry
Cornish hens are small chickens, typically weighing under two pounds, bred from Cornish game fowl.
Despite the name, a Cornish hen can be either sex—they're simply slaughtered young, before reaching full size.
Their compact portion makes them ideal for individual servings: Each guest gets their own Cornish hen.
